Pineapple Grilled Pork Chops

 Marinade: Combine and mix pineapple juice from 8 oz. canned pineapple rings, ¼ cup brown sugar (you can use less or even none), ¼ cup low-sodium soy sauce and ¼ teaspoon garlic powder in large Ziploc bag. Place 4 pork chops (trimmed of any fat) in marinade and refrigerate overnight. Cooking: Turn grill on medium-low. Remove pork chops from marinade and shake off any excess marinade. Place on the grill as far away from the heat source as possible. Grill until browned and center is no longer pink, but be careful to not overcook it (7-9 minutes per side is a guide, but use your judgment since the thickness of the chop will vary, which affects cooking time). Brush several times with marinade and let marinade cook onto surface of the meat. Discard excess marinade. While meat is grilling, place 4 pineapple rings on the grill, and cook until hot and grill marks are visible. Serve pork chops topped with pineapple.
