Grilled Peach Salad

Not only are peaches naturally sweet treats, they are low in calories and high in vitamins A and C, and contain heart-healthy potassium, which can help maintain healthy blood pressure. This salad can make a great lunch or light supper.





Servings: 8

Prep Time: 20 minutes  



3 Tbsp rice wine vinegar               

1 Tbsp Dijon mustard               

1/3 cup olive oil


3 peaches, pits removed and cut into wedges           

1 Tbsp olive oil           

8 cups arugula           

½ cup chopped pecans           

1/3 cup reduced fat crumbled feta cheese 


Preheat grill pan to medium-high heat.

For the dressing: combine vinegar and Dijon in a small bowl. Slowly pour the olive oil into the bowl, whisking constantly to emulsify.

For the salad: Place the peaches in a bowl and drizzle with olive oil. Toss well. Place on the grill pan and cook for 1-2 minutes on each side. Place the arugula mix in a large bowl. Add chopped pecans, feta, and cooked peaches. Drizzle with dressing and toss to coat.
