Mock Key Lime Pie

WomenHeart's Website and Social Media Manager made this dessert for a staff lunch, and it was a hit even among those who don't care for avocados; this no-bake recipe usually calls for a graham cracker crust, but she made it with a gluten-free shortbread cookie crust for a colleague with dietary restrictions. "I don’t know why there is such a thing as “mock key lime pie” but, being from Florida, I grew up eating this made with Florida avocados, which have a lighter, fluffier texture than the typical Hass avocados, but the pie is good with either," she says. Serve in small slivers, because the pie is very rich and creamy!

To make the crust:
2 cups gluten-free shortbread cookie crumbs (shortbread cookies roughly pulsed in a food processor)
2 TB coconut flour (finely ground coconut)
1 TB butter or margarine

Put all ingredients into a food processor and blend together until well-combined. Pat into the bottom and partially up the sides of a 8 or 9-inch springform pan or pie plate.

To make the pie filling:
2 ripe avocados, pits and skin removed
1 ripe banana
¼ cup fresh lime juice (lemon juice is also nice)
½ tsp lime (or lemon) zest
1 14-ounce can low-fat sweetened condensed milk

Put all ingredients into a food processor or blender and blend thoroughly. Spoon into the prepared pie crust in the pie plate and smooth the top; decorate with fresh raspberries or other fruit if desired. Chill overnight and serve with whipped cream (optional).
