Creamy Southern Coleslaw

The basic ingredients of cole slaw -- cabbage and carrots -- are full of heart-healthy fiber and vitamins, but the creamy dressings can be laden with fat and cholesterol. This version lets you enjoy without the guilt!





Servings: 8

Prep Time: 1 hour 15 minutes  


1 lb. green cabbage (about half a medium cabbage), shredded

1 large carrot, peeled and shredded

½ small white onion, peeled and shredded 

1 Tbsp distilled vinegar

½ cup low-fat mayonnaise

1 Tbsp Splenda

¼ tsp Mrs. DASH

¼ tsp ground black pepper

½ tsp celery seeds (NOT celery salt)


Whisk together vinegar, mayonnaise, Splenda, Mrs. DASH, black pepper, and celery seeds. Add the cabbage, carrot, and onion. Adjust seasonings to taste. Cover and refrigerate 1 hour before serving.
