Black Bean & Sweet Potato Chili

Serves: 8


-1 Tsp and 2 tsp extra virgin olive oil

-1 medium or large sweet potato, peeled and diced

-1 large red onion

-4 cloves of garlic, minced

-2 Tsp chili powder

-1/2 tsp ground chipotle pepper

-1/2 tsp cumin

-1/4 tsp salt (optional)

-3.5 cups low-sodium chicken stock

-One 15 oz can low-sodium black beans, rinsed

-One 14.5 oz can low-sodium diced tomatoes

-1/2 cup dried quinoa

-4 tsp lime juice

-Optional: avocado and cilantro


-Heat a large pot with the pol over medium-high heat

-Add the sweet potato and onion, then cook for 5 min. or until the onion is softened

-Add the garlic, chili powder, chipotle pepper, cumin and salt; stir

-Add the chicken stock, tomatoes, black beans and quinoa; bring mixture to a boil; stir until everything is combined

-Cover the pot; reduce the heat to maintain a gentle simmer

-Cook for 10-15 min. until the quinoa is fully cooked and the sweet potato is soft

-Add the lime juice; remove the pot from the heat

-Garnish with avocado and cilantro if desired
