Broiled Star Fruit with Vanilla Frozen Yogurt


Serves 4
Each serving equals ½ cup of fruits or vegetables

Ingredients                       

  • 4 medium star fruits, trimmed and each sliced into 8 stars
  • 2 Tbsp. fresh lemon juice
  • 2 Tbsp. light brown sugar
  • 2 cups sugar-free, fat-free vanilla frozen yogurt

 
Directions
Place a broiler rack 6 inches from the source of heat.  Preheat broiler.  Arrange star fruits on baking sheet and brush with lemon juice.  Sprinkle with brown sugar.  Bake until sugar begins to bubble and brown, about 2-3 minutes.  In the mean time, scoop frozen yogurt into dessert dishes.  Top each serving with 4 slices of star fruit.  Serve immediately.
