1 package (6 oz) fresh baby spinach
1/2 cup crumbled feta cheese
1/3 cup slivered walnuts, toasted
1/2 cup pomegranate seeds
2 Tbsp olive or canola oil
2 Tbsp sugar
2 Tbsp white vinegar
3/4 tsp poppy seeds
1/4 tsp salt (optional)
1/8 tsp ground mustard
In a large salad bowl, combine the spinach, feta, walnuts and pomegranate seeds.
In a medium bowl, whisk the vinegar, sugar, mustard, poppy seed and salt (if desired). Whisk in the oil gradually.
Alternately, place these ingredients in a screw-top jar and shake well to combine.
Drizzle over salad and toss to coat.
