Pear, Beat and Carrot Slaw

Raw shredded beats, pears and carrots make a crunchy, vibrant and sweet beet slaw. This healthy slaw is delicious on its own or as a topping on your favorite lean meats.

Servings:

4 servings

Ingredients:

3 tablespoons grapeseed oil or extra virgin olive oil

2 tablespoons lemon juice

1 teaspoon honey

1/4 teaspoon salt

1/4 teaspoon ground pepper

3 cups shredded beats (2-3 medium)

1 cup shredded carrots (2 medium)

1 cup grated firm ripe pear (1 medium)

1 scallion, thinly sliced on the diagonal

 

Preparation:

Whisk oil, lemon juice, honey, salt and pepper in a large bowl

Add beats, carrots, pear and scallion

Toss well to coat

166 calories; 10 g. fat; 1 g. sat. fat; 2 g. monosat. fat; 0 mg. cholesterol; 19 g. carbohydrates; 2 g. protein; 4 g. fiber; 221 mg. sodium; 391 mg. potassium
