Sliced Melon Salad with Spicy Lime Dressing

Melons come in many varieties, shapes and sizes. They are available all year, but are most abundant during the summer months, May through September. Cantaloupe, honeydew, and watermelon are the best known melons, but also try casaba, crenshaw, or Persian, available in supermarkets and some roadside stands. Melons are best when picked at the peak of ripeness, yet still firm, however they will not get sweeter after they are harvested because they have no starch reserves to convert to sugar. The general rules for selecting a melon are to choose one that is symmetrical in shape; oval, round, or oblong; free of cracks, bruises, or soft spots; and with just a slight softness to the touch at the base of the melon. Sweet smell or aroma may or may not be a good clue.


Makes 6 servings

Ingredients:
3 cups fresh spinach
½ medium cantaloupe, thinly sliced
½ small red onion, thinly sliced
3 tablespoons fresh lime juice
1-2 teaspoons hot sauce
½ teaspoon sugar

Instructions:
On a serving platter, layer the spinach and the cantaloupe slices. Top with red onion slices. In a small bowl, stir together the lime juice, hot sauce and the sugar. Pour the dressing over the salad and serve immediately.
