Heart Healthy Recipes - Nutty Greens with Ranch Dressing

Nutty Greens with Ranch DressingNutty Greens with Ranch Dressing
Prep: 5 minutes
Makes 8 servings

Ingredients:

½ package (12-ounce size) soft silken tofu
1 envelope (1 ounce) ranch dressing mix*
½ cup soymilk
1 bag (12 ounces) salad greens with red cabbage and shredded carrots (8 cups)
2/3 cup roasted soy nuts
½ cup shredded reduced-fat Cheddar or blue cheese (2 ounces)

* Use the ranch dressing mix that calls for milk and mayonnaise (not buttermilk and mayonnaise).

Directions:

1. Place tofu, dressing mix and soymilk in blender or food processor. Cover and blend on high speed until smooth and creamy.

2. Toss salad greens with tofu mixture in large serving bowl. Sprinkle with soy nuts and cheese.
