There are
many varieties of watermelon with the rind varying from green to yellow to
white. The flesh color also varies from red to pink and orange. Watermelons are
a good source of vitamin C and vitamin A (beta carotene). Additionally, red
watermelons have the phytonutrient, lycopene, which protects against prostate
cancer.
Servings: 4
Ingredients:
2 Tbsp. water
1 Tbsp. unflavored gelatin
4 cups cubed, seedless watermelon
2 Tbsp. lime juice
2 Tbsp. honey
Directions:
Pour water into a small, microwave-safe bowl. Sprinkle gelatin over the water
and allow it to soften for 2 minutes. Microwave on High for 40 seconds and
stir. Let stand again for 2 more minutes, and stir until smooth. Blend one cup
of watermelon, lime juice, and honey. Blend in melted gelatin. Add watermelon
one cup at a time and blend until smooth. Pour mixture into an 8x8 inch square
dish. Place into the freezer and freeze until almost firm. Transfer to a
chilled bowl and beat with an electric mixer until fluffy and bright pink.
Scoop into serving dishes and return to the freezer. Freeze until firm. Remove
from the freezer 10-20 minutes before serving.
