Carolina Slow Cooker Pulled Pork

Pulled pork is a Southern classic that can be loaded, unfortunately, with fat and calories. This slimmed-down slow cooker version allows you to still indulge at the next family barbecue!




Servings: 16 (4oz. per serving)

Prep Time: 8 hours 10 minutes


3.5 cups cider vinegar

1.5 Tbsp sugar

1.5 Tbsp Hot Red-Pepper Flakes

1 Tbsp ground black pepper

4 lb. lean pork loin

Directions:  Bring vinegar to a boil with sugar, red-pepper flakes, and 1 Tbsp. pepper in a small saucepan, stirring until sugar has dissolved, then cool. Place the pork loin in the crock-pot and drizzle with vinegar sauce. Cook on low for 8 hours or until the internal temperature of the pork loin reaches 160°F.
