Asian Pear Slaw

Serves 6

Each serving equals 1 cup of fruits or vegetables 


6 celery ribs, cut into chunks
4 Tbsp. lime juice
4 Tbsp. seasoned rice vinegar
1 tsp. fresh ginger root, minced
6 Asian pears, sliced ¼ inch thick
3 scallions, chopped
¼ cup fresh cilantro, chopped (optional)
½ tsp jalapeno chile, finely chopped 

Directions:Whisk together the lime juice, vinegar, and ginger.  In a large bowl, combine celery and remaining ingredients, along with the lime juice mixture and mix until well combined.  Season with salt and pepper to taste.  Cover and let stand at room temperature for at least 15 minutes before serving.
