Dice the following and combine in medium
1-2 English cucumber, 1 orange pepper, 1 red pepper, 1 yellow
pepper, ½ red onion, 1 avocado (skin and seed removed). Halve 20 cherry tomatoes and add to mixing
bowl. Add ½ can chick peas (drained and rinsed). Top with 2 tablespoons lemon
juice, freshly ground pepper, and fresh parsley to taste.
