Grilled Portobello Mushrooms

Many people may think of mushrooms as vegetables, but did you know that mushrooms are actually fungi? The word "mushroom” is used to refer to any fungus that has a stem, a cap, and gills or pores on the bottom side of the cap. Mushrooms are used extensively in cuisine and can be eaten both raw and cooked or added as a garnishment to a meal. While mushrooms are low in calories, fat and sodium; they are a good source of B vitamins, selenium, copper, and potassium.

 


Ingredients:

3 portobello mushrooms

¼ cup canola oil

3 Tbsp chopped onion

4 cloves garlic, minced

4 Tbsp balsamic vinegar

Directions: Clean mushrooms and remove stems, reserve for other use. Place caps on a plate with the gills up. In a small bowl, combine the oil, onion, garlic, and vinegar. Pour mixture evenly over the mushrooms caps and let stand for 1 hour. Cook over hot grill or under the broiler for 10 minutes, turning halfway through cooking time. Serve immediately.
