Open-Faced Toasted Breakfast Bagel

They say that breakfast is the most important meal of the day and there are studies that show that it's easier to maintain a healthy weight if you eat regular meals, rather than skipping meals in an attempt to shed calories. This tasty recipe is good for breakfast or lunch, or even dinner on a busy evening!

 

 

 

Servings: 1

Prep Time: 15 minutes

Ingredients:

Cooking Spray

1 Tbsp yellow onion, chopped

½ tsp garlic, minced

2 egg whites

2 Tbsp fresh Baby Spinach

1 Tbsp tomato, chopped

1/8 tsp ground black pepper

2 oz. multigrain bagel (1 side of a regular sized deli bagel)

½ oz. soft goat cheese

Directions: Spray small skillet with cooking spray and sauté onions and garlic. In a bowl, whisk egg whites, spinach, tomato, and pepper. Add to skillet and cook until eggs set. Toast your bagel and spread with goat cheese. Cut omelet into fourths and serve on bagel.
