This tasty recipe is good for breakfast or lunch, or even dinner on a busy evening!
Time: 15 minutes
Tbsp yellow onion, chopped
tsp garlic, minced
Tbsp fresh Baby Spinach
Tbsp tomato, chopped
tsp ground black pepper
oz. multigrain bagel (1 side of a regular sized deli bagel)
oz. soft goat cheese
Directions: Spray small skillet with
cooking spray and sauté onions and garlic. In a bowl, whisk egg whites,
spinach, tomato, and pepper. Add to skillet and cook until eggs set. Toast your
bagel and spread with goat cheese. Cut omelet into fourths and serve on bagel.
