Peel and slice 1 large eggplant into 1-inch
thick rounds. Sprinkle with Mrs. DASH (low sodium seasoning) and allow to sit
for 20 minutes. Rinse and pat dry. Preheat oven to broil. Spray baking sheetwith
non-stick cooking spray. Place eggplant on baking sheet. Place in oven for 4-5
minutes. Remove from the oven and drizzle with 1 tablespoon extra-virgin olive
oil and 2 tablespoons Balsamic vinegar. Sprinkle with 3 cloves minced garlic
and ½ teaspoon red pepper flakes. Broil for another 4-5 minutes.
